I have such distinct food associations with summer: from sweet tomatoes and crisp basil to ripe berries and refreshing watermelon, the list goes on. During this season, ingredients have a from-the-garden freshness that allows them to stand on their own. It’s a time when heavy doses of herbs, spices, and sauces are superfluous; when simple flavors in unique combinations are more than enough to excite the palate. As the season winds down, I’m giving an homage to the delicious minimalism of the season. Here are a few mouth-watering, summery recipes that require six or less ingredients:
1. “Family Heirloom” Bruschetta
fresh heirloom tomatoes, mozzarella, and basil. garlic. olive oil. rustic, artisan bread.
2. Grilled Prosciutto-Wrapped Asparagus
asparagus spears. thinly-sliced prosciutto di parma. olive oil, salt, and pepper.
3. Corn on the Cob with Mint-Feta Butter
halved corn ears. butter, feta cheese, and minced mint leaves. kosher salt.
lobster meat. fresh lemon juice. finely chopped shallots and tarragon. mayonnaise. black pepper to taste. optional: serve over greens or a crusty bread (brioche is my favorite)
5. Zucchini, Corn, and Basil Fusili with Bacon
coarsely chopped zucchini. corn kernels cut from the cob. sliced bacon. fusili. basil pesto.
penne. quartered artichoke hearts. sweet peas. mayonnaise and pesto. freshly grated parmesan.
7. Berry-Infused Champagne Cocktail
raspberries and blackberries. simple sugar syrup. splash of vanilla vodka. champagne.
